Kafta: the lean % of the beef decides the calories.

Kafta is mostly beef, so the beef decides the numbers. Swapping 80/20 for 95% lean takes a serving from 289 to 162 kcal, and the allspice, onion and parsley still do the flavouring.

  • 162 kcal a serving, down from 289 for the classic, with 22 g protein, 3 g carbs and 6 g fat
  • 2 swaps, each with what it does to a serving, and 2 ways to add protein, up to 29 g a serving
  • 6 servings, weighed at 640 g when finished, from 7 USDA FoodData Central entries in the library

Classic vs lighter, per serving.

The same kafta, made two ways from the same library entries and the same 6 servings. The lighter version is the one built on the screens below.

Saturated fat comes from the same USDA entries; the recipe sheet itself shows calories, protein, carbs and fat. Calorie and macro figures are fitness estimates, not medical or dietary advice.

Swap by swap.

Each change in turn, from the classic to the lighter version, and what it does to one serving.

1. Use 95% lean beef instead of 80/20

−117 kcal, +4 g protein, −15 g fat, −5.4 g saturated fat a serving

For the same 600 g of beef, 117 kcal and 15 g of fat less a serving. The allspice and onion carry the flavour, so the leaner meat is hard to tell apart on the grill.

2. Use 7 g of oil, not 14 g

−10 kcal, −1 g fat, −0.1 g saturated fat a serving

Lean beef needs only a brush of oil on the skewers. The rest was 10 kcal a serving.

More protein, if you need it.

Hitting a protein target is the hard part for most people. Each option is added to the lighter version on its own, with what it does to a serving of 22 g protein and 162 kcal. Save the one you like as its own recipe.

Use 800 g of beef

+45 kcal, +7 g protein, +2 g fat, +0.7 g saturated fat a serving, making 29 g protein a serving

Another 200 g of 95% lean beef adds 7 g of protein a serving for 45 kcal.

Serve it with Greek yogurt sauce

+30 kcal, +5 g protein, +2 g carbs a serving, making 27 g protein a serving

300 g of nonfat Greek yogurt, stirred with garlic and lemon, adds 5 g of protein a serving for 30 kcal.

Ground meat: read the lean percentage, not the animal.

The number on the pack moves the calories more than the animal does. A 96/4 pack sits between the 95% and 97% entries: choose the closer one, or scan the barcode.

Oil and fat: the type changes the fat, the amount changes the calories.

The three oils below are each 884 kcal per 100 g, and ghee is within a few calories of them. Swapping one for another moves the saturated fat, not the calories; using less is what saves them. Butter is lower per gram only because part of it is water.

The sample data

These are the amounts of the lighter version used on the screens below, with each figure taken from the library entry for that ingredient. They are sample figures for a pot or tray of this size, not a measurement of anyone's kitchen.

Why this recipe

Kafta is a good recipe to build because the meat is almost the whole dish: one ingredient does nearly all the work, so a change of lean percentage shows up at once. Skewers from a shop rarely list their blend, and building your own gives you numbers you can trust.

What to weigh

Weigh the beef raw, as the library entry describes it. The sample comes off the grill at about 640 g from 794 g of raw ingredients, because water and some fat leave in the heat. Fat that drips away is not subtracted, so the figures are a little high rather than low.

The full workflow, in four steps.

1. Open Create a recipe and search the library

Open Add food and choose Create a recipe, name it, then choose Add ingredient and search the library. Typing "beef ground 95%" lists the ground beef entries by lean percentage, each with its calories per 100 g.

Add ingredient on a phone with “beef ground 95% raw” typed in the search box and matching library entries listed, each with its calories and a portion.

2. Enter the amount you weighed

Pick the entry that matches the pack (95% lean, raw here), switch the portion to grams and enter what the scale showed. The sheet shows 822 kcal for the beef before you add anything else.

The amount sheet for beef, ground, 95% lean, raw: 600 grams giving 822 calories, 128 g protein, 0 g carbs and 30 g fat, with an Add to recipe button.

3. Add the rest, then set the servings and finished weight

Add the onion, parsley, spices and 7 g of oil, then enter the 6 servings and the 640 g you weighed after grilling. One serving comes to 162 kcal.

4. Save it and log a serving

Save the recipe and it becomes one of your own foods. The next screen is the normal Add food form, ready to log one serving or any weight of it.

The saved Kafta recipe ready to log: one serving of 107 g at 162 kcal with 22 g protein, 3 g carbs and 6 g fat.

Tips while you build it

  • Weigh the beef before you mix it. Cooked weights are not what the library row describes, and a mixture with onion in it is hard to weigh back out.
  • Lean beef holds together less, so chill the mixture for twenty minutes before you shape the skewers.
  • A serving is about 107 g of grilled kafta, roughly three small skewers. Log by weight when you are measuring.

Go further

  • Making it for guests? Build the 80/20 version as a second recipe, with 600 g of 80% lean beef and 14 g of oil, and log whichever one you served.
  • Grate the onion and squeeze it dry before it goes in: the mixture stays moist without any extra oil.

Each change is a second recipe with its own name, so the first stays as you built it.

Kafta questions.

How many calories are in kafta?

It depends on the beef. The sample comes to 162 kcal a serving with 95% lean beef, with 22 g protein, 3 g carbs and 6 g fat, against 289 kcal with 80/20 beef.

Does lean beef make dry kafta?

It can be a little drier. Grated onion, plenty of parsley and a rest in the fridge keep the mixture moist, and a short time over a hot grill helps.

Should I weigh the meat raw or cooked?

Raw, because the library entry is raw. Weigh the cooked skewers once, to enter the finished weight.
